5 Fab BBQ Recipes

1) BBQ Chicken Fajita Skewers

Chicken fajitas are a favourite in many homes throughout the year and can be easily adapted for the barbecue. This easy and fun recipe from BBC Good Food is sure to be a hit at your Bank Holiday BBQ.

Feel free to mix up the seasoning with variations of your favourite herbs and pick whatever vegetables your family prefers. The skewers should only take around 10-15 minutes to cook so you won't be waiting long for them. Serve with tortillas slightly heated in the oven, then an optional dollop of sour cream, salsa or guacamole and a sprinkling of cheese.

2) Easy Make Chinese BBQ Ribs

Nial and Helen from award-winning Northern Ireland food blog Pikalily.com  share a great selection of BBQ ideas with their followers, and one that caught our eye was their easy to make Chinese BBQ Ribs. Buy some pork ribs from your local butcher and mix up their special Chinese Marinade for a taste sensation!

When it comes to cooking your ribs on the BBQ, apply them to the grill and cook for approximately 30-minutes, ensuring you regularly turn and baste them. Alternatively, you can cook in the oven for 40-minutes before finishing them off on the BBQ for that nice smoky, charred flavour.

3) Grilled Peaches

BBQ doesn’t always have to mean savoury, and this Grilled Peaches recipe is the perfect way to celebrate the end of summer with family and friends. Begin by making your caramel sauce with added sea-salt to compliment the syrupy liquid.

When your salted caramel is ready, leave aside and cook your peaches on the BBQ for about 3-5 minutes until they are lightly scorched, then remove them from the heat. Serve with the sticky salted caramel sauce and finish with a dollop of indulgent mascarpone cream. If you’re not a fan of peaches, other stoned fruits like plums, nectarines and apricots work perfectly too.

4) Jamie Oliver’s BBQ Jerk Fish

While Jerk Chicken can be a popular BBQ dish for many to try out, Jerk Fish isn’t perhaps as high on the list. However, this recipe makes a great alternative when you are looking for something a little different on the BBQ.

This zesty jerk marinade goes great with lots of fish, from cod to monkfish. Bake the fish in a pre-heated oven for 15-minutes before finishing on the BBQ and serve with some corn on the cob and a wedge of lime.

5) Smoked Bacon Cheese Burgers

When it comes to BBQs, the food of choice for many is the simple, tasty burger. There’s just something hypnotic about the sizzle of a burger and melting cheese over it. Whether it’s a veggie burger or a meat burger, BBQs just aren’t the same unless you’re wedging a burger in between two buns.

The Smoked Bacon Cheese Burgers that the BBQ Pit Boys have whipped up are easy to make, and sure to be a hit with any friends or family you’re planning to invite to your BBQ. Once your homemade burgers are cooked through, quickly add some cheese to the top and close the BBQ lid again to allow all the smoky goodness to infuse the burger, before topping with some smoked bacon. Simple but effective!
