Boil off some penne pasta while you cook onion, garlic, diced tomatoes, basil, red peppers and tomato puree in a pan. Let this simmer then add in cream cheese along with parmesan until it melts to a creamy consistency. Stir in fresh spinach and you’re good to go for the week!
